1 medium onion, finely chopped
3 garlic cloves, minced
1 Lb. shitake mushrooms, sliced
∏ Lb. turkey or chicken sausage (pre-cooked and sliced)
1 ∏ cup chicken stock
1 cup white wine
1 tsp. thyme
4 tbsp. parsley
2 tbsp. unsalted butter
Parmesan cheese, salt and pepper to taste
1 Lb. Paccheri Pasta
Heat olive oil in deep pan. Add onion and garlic, stir often do not burn. Cook about 8 min. Add the mushrooms cook another 5 min. add more oil as needed. Add the wine and cook over high heat about 5 min. Add the sausage, stock, thyme and cook over moderate heat about 10 min. to reduce liquid. Meanwhile cook the paccheri pasta in salted water til al dente, drain.
Add the butter to the sausage/mushroom mixture pan and combine. Dish up the pasta and top with mixture. Sprinkle each plate with chopped parsley and pass the freshly grated parmesan. Serves 4
