Instructions: Cut cabbage into quarters. Slice the cabbage and carrots using a mandolin or food processor slicing blade. In a large bowl, mix together the mustard, mayo, yogurt, agave, vinegar, and salt and pepper. Whisk very well making sure all the ingredients are well combined. Add mixture to the cabbage and carrots and combine very well. Add chopped parsley and blue cheese. Season it to your taste with salt and pepper. Cover salad and keep in the refrigerator until serving time. Before serving add walnuts and combine well.
Note: You can make this salad using only white cabbage and shredded carrots. You can find both already shredded at Trader Joe’s stores. Do not add walnuts until right before serving.
It’s great on top of hamburgers (minus the nuts). Also makes a delicious side for BBQ chicken, tri tip or any kind of meat. Use it for a unique twist on a Reuben or Pastrami sandwich. Enjoy it!

½ small to medium white cabbage- shredded
½ small to medium purple cabbage- shredded
2 cups grated carrots
1 cup chopped fresh parsley
½ cup good mayo
½ cup plain yogurt
2 tablespoons blue cheese mustard or Dijon Mustard
2 tablespoons sesame vinaigrette
1 tablespoon agave or honey
1 cup crumbled blue cheese
1 cup chopped raw or toasted walnuts
Salt and pepper to taste
I love crumbly blue cheese, goat cheese or any kind of cheese in my salad! Your salad looks like a complete meal! So you also use it as some sort of coleslaw, paired with burgers and sandwiches?
It is a pretty filling coleslaw, especially with the walnuts. If you remove the nuts it also makes a great addition to a Reuben, Pastrami or Turkey sandwich. OP – I’m sure you can get creative and come up with lots of other ideas of foods you can pair it with.
