Instructions: In a large bowl mix the fruits together very gently. In a small bowl mix jam and Crème Fraiche till well combined. *If you want a lighter dressing you can thin it out by adding a little water – 1-2 tablespoons depending on your preference should be fine.  Mix the Champagne jam mixture into the salad bowl and combine well till all the fruits are coated.  Sprinkle fresh mint on top and you’re ready to serve it.

1 cup canned mandarin or fresh orange sections
1 cup diced honeydew melon
1 cup diced cantaloupe
1/2 cup sliced strawberries
1/2 cup sliced peaches or nectarines
1/2 cup fresh raspberries

4 tablespoons Crème Fraiche
1/4 cup fresh finely chopped mint
